The base of the Jester King Viking Metal beer is the Gotlandsdricka beer. Then raw water from a well at Hill Country is added with the addition of oak-smoked wheat, smoked malted barley, and finally flaked rye. The concoction is then boiled and Juniper berries and myrica gale are added during the process. Fermentation takes place in stainless steel tanks with a mixture of a culture of native wild yeasts and bacteria, then transferred into Old Tom Gin barrels from Ransom Spirits to rest and condition.
Jester King beers are fermented with wild yeast which makes each release slightly different in the bottle. The beers can be kept for a couple of years to further age in the bottle.
